K Cooks: Sesame Seed Granola

I CHERISH this NO SUGAR, NO oil Granola Recipe….for some reason, the puffed cereal crunchies often are my favorite. One version that lasted less than a week was purely candied ginger and cashews……HEAVEN!

8 1/4 Cup Servings

Ingredients:

1/3 Whole Sesame Seeds + 3 TBL Flax Seeds, TOASTED…

Then Grind/Blend in the Vitamix  adding 1-2 TBL of water, 1/2 tsp PURE vanilla extract, and 1/4 Cup honey until it forms a thick paste…5 minutes or so. Use could use a coffee grinder first to pulverize the seeds and then blend in a blender

Dry Ingredients

1.5 Cup Puffed Wheat Cereal

2 Cup blend of Old Fashioned Oats, Rye Oats, Triticale Oats

1/4 Cup Wheat Germ

1/3 Cup Nuts (I used pumpkin seeds, almonds, sunflower seeds, walnuts)

1/4 cup dried fruit (I used a tropical mix found at Whole Foods)

1/2 tsp pumpkin pie spice

1/4 tsp salt

Mix dry first, and then pour the paste over it and mash together…it should be wet, but you are going for a soggy consistency.

Spread on a pan, and roast on low (250) for 15 minutes….STIR!…….roast for another 15 STIR……….Final Roast is only 10………then STIR and keep in pan to cool for an hour.
