For the healthy pancakes-for-dessert-cook-off, I created two types of treats. This one is vegan, fruity and a health conscious indulgence. To make the batter (serves 4)
.5 Cups all Graham Flour, with a pinch of salt in there
1Tablespoon Agave
1¾ tablespoons baking powder
.5 teaspoon vanilla extract.
.5 cups coconut milk
Blend this up and add in shredded coconut and a whole Kashi Bar ….This will give it “chunky” ooey-gooey insides that when eating warm, melt in your mouth like turnovers.
Once done, top it off with coconut, whip cream, perserves and another bar crumbled up…yum-0!
